I never thought I’d say this, but I could eat this corn casserole by the pan-full, well, maybe it would take some help from my husband. But, let’s be serious: who knew something so easy could be so delicious?
This simple dish has now become a staple at all family gatherings and potlucks.
- 2 eggs
- 1 cup sour cream
- 1 package corn bread mix (Jiffy works well, 8.5 ounce)
- 1 can (15 ounce) whole corn (drained)
- 1 can (15 ounce) creamed corn
- 1/2 cup melted butter
Grease a large casserole pan and preheat your oven to 350 degrees.
Combine all ingredients then spoon mixture into casserole pan. Back for 50-55 minutes or until toothpick comes out clean.
Voilà! The perfect side dish is done.
