Every home baker needs a cookie that won’t fail them. One that always tastes incredible – moist and chewy – and only requires three ingredients. Three? That’s crazy! No, my friend. That is one of the best cookies you’ll ever have. Every time I offer to make cookies for my husband, these are the ones he wants. Not one of the many complicated cookies from my massive cookie recipe book. These simple, three-ingredient cookies. They may become your favorites too.
Cake Mix Cookies
1. Preheat oven to 350.
2. Throw your three ingredients together and mix well. The dough will be thick.
3. Roll the dough into approximately one inch balls. Place on ungreased cookie sheets, about two inches apart.
4. Bake at 350 for 8-10 minutes or until the tops are cracked and edges are slightly firm. Let cool on the cookie sheets for 2-3 minutes before moving to a cooling rack.
The great thing about this recipe (well besides, the simplicity) is that you can make different kinds of cookies using the same basic ingredients. Obviously chocolate is a big winner (that includes chocolate cake mix, devil’s food cake mix, dark chocolate cake mix. I can personally vouch for all of those – have I mentioned that my husband really likes these cookies?), but lemon is also a great option if you prefer a fruity touch, or yellow if you just want plain cake-flavored cookies.
You just can’t lose with these cookies. But be careful – it’s easy to eat five of them without meaning to. Not that I would know or anything…
